- Tortillas of your choice
- 1 tsp. olive oil
- Chili lime chicken shredded – click here for recipe
- Jalapeno diced
- Shredded cheese of your choice (Cheddar, Monterrey, pepper jack etc.)
- Fresh cilantro
- Fresh lime juice
- Sour cream or crema
- Salsa – click here for recipe
- Queso fresco or cotija (optional)
Place a little olive oil in a frying pan and heat on medium-high. Place your bottom tortilla in the pan and add the shredded chili lime chicken, cheeses of your choice, jalapeno and a good splash of fresh lime juice, followed by your top tortilla. Keep watch over your quesadilla so that it does not burn. I take my fingers and twirl it around in the pan until it’s ready to flip. When it’s golden brown and possibly a little seared go ahead and flip it and repeat. Serve hot with fresh cilantro, queso fresco, sour cream, salsa, etc.
Note: Feel free to put cilantro inside your quesadilla as well as other favorites such as green onion, red pepper etc.
