Chai Tea Latte


1 1/2 tsp. coriander seeds

3 tbsp. cardamom seeds (crush them a little with a mortar and pestle)

1/3 cup of ginger

4-5 black peppercorns

1 cinnamon stick

3 cloves

1 dash of allspice

3 tbsp. or less of brown sugar

1/2 cup black tea

3 cups of milk (Cow or goat. Goat is the healthier choice or omit the milk)



Bring the spices to a boil in 2 cups of water; set aside covering with a lid as long as possible. You can even let it sit over night right on the stove. This is where all your flavor is! When your ready strain the liquid into a large saucepan. Add your milk if using and a half cup of fresh black tea. Bring to a low boil and add the brown sugar.
