Mango Salsa



4-5 Roma tomatoes

1 Red onion

1 Mango

1 Jalapeno

1 Lime


Salt & Pepper


Rough chop the tomatoes, onion, jalapeno and mango. Place in a large bowl and add the juice of one lime, a large bunch of cilantro and a good pinch of salt and pepper. Toss the ingredients together and use a food chopper making one batch at a time until you have your desired chunkiness. When you have finished the batches, stir the salsa one last time before covering and putting it in the fridge. You want to chill it for at least an hour before serving because as it chills all the delicious flavors marry together and allows it to set a little.

Notes: If you don’t have a food chopper than you can simply dice your veggies until you get the desired chunkiness. Buy organic ingredients when possible.
