Roma tomatoes (sliced thin)
Mozzarella cheese (Sliced medium)
Spray a grill pan with pure olive oil and let it heat up on medium temperature. Assemble your sandwich by spreading a thin layer of pesto on both the top and bottom pieces of bread. Begin to layer your tomato and then mozzarella and top it off with fresh basil. When the grill pan is ready to go, put your sandwich on and place the press on top. It will take about seven minutes on each side. Just check it and if need be, lower the heat. You want it golden brown and the cheese melted.
