Black Bean Dip



1 can black beans

1 white onion

1 red pepper

1 jalapeno (optional)

1 lime

2 tbsp. cumin

Dash of salt

Cheddar cheese

Shredded lettuce

Sour cream

Salsa (optional)

Corn chips



Chop up veggies. Place beans in a saucepan on medium heat. Add chopped veggies, the juice of 1 lime, cumin, and salt. Let the mixture cook down about 20-25 minutes. Place in an oven safe dish and sprinkle cheddar cheese over the top to cover all the beans. Cook on 300 degrees until the cheese is melted. Serve immediately with chips, shredded lettuce and sour cream.

Note: When possible buy organic ingredients.
